As I mentioned I started my doctoral program and have little time for much extra-curricular activities. In the past year I have brewed less than I am used to, but I have been able to knock out a few beers. I won't do much of a recap here (I'll save that for a later post) but I have almost exclusively brewed sour or funky beers. I decided last winter to give up on trying to brew clean beers (at least any with any age on them) and so I have started to develop two house mixed-strains (brett, lacto and sac.). I have nailed down a solid Berliner procedure and have brewed several Berliner and Gose, again an update will come later.<br />

For my Autumn Saison I decided to brew a pumpkin inspired beer. However, instead of a pumpkin spice slant, I went for other fall flavors of pumpkins, dark brown sugar, toasted pumpkin seeds and fresh sage. The squash/pumpkin and their seeds were from a local farm that we are a CSA member of (<a href="http://suziesfarm.com/" target="_blank">Suzies Farm</a>). The sage was grown in my yard and I purchased dark brown Muscavado sugar. I cut up the squash, de-seeded, and roasted the squash with some brown sugar. I then toasted the seeds to a deep brown toast level (they had a nice toasty, nutty flavor). I threw the roasted squash and crushed toasted seeds into the mash. I added the muscavado sugar to the boil and threw in some Ultra hops at the start of the boil for the lone addition. At flame out I threw in about 12 fresh sage leaves. I chilled and then pitched my House Blend #1 (WLP 644 "Sacc Trois" and WLP 670 American Farmhouse) it was the second generation of this blend. The beer has a wonderful orange hue, a nice aroma of burnt sugar, molasses and sage. I'm looking forward to having this beer with Thanksgiving dinner. My next beer will be a Dark Winter Saison inspired by Lost Abbey's 10 Commandments and Mike Tonsmiere's annual dark saison beers.<br />

So I have dabbled in sour beer brewing for about 7 years. I
have never really made a consistent effort in the brewing of sour beers
(something I think is important to do if you want to be successful) but I have
brewed a batch or two a year. This includes Berliner Weisse, Gose, Flemish
Sours and American Wild/Sour Ales. I have had two batches that I had to drain
pour, and a couple that have been great and served to great acclaim. My first
attempt just took 5<sup>th</sup> place at the San Diego County Fair, it was a 7
year old Flemish Red. I had a dark Saison get infected with my “garage” brett
strain and so I decided to start adding the dregs of some of my favorite sour
beers including Russian River and early batches of the Bruery beers. This beer
came out wonderful after having to wait a year and a half for diacetyl to get
cleaned up by the brett. I served this beer on tap at the 2011 NHC Club Night
here in San Diego. It was a big hit and the keg kicked quickly. I also brewed
three <a href="http://www.1227brewing.blogspot.com/2011/05/napoleons-dynamite.html" target="_blank">Berliner Weisse</a> and two <a href="http://www.1227brewing.blogspot.com/2011/08/pop-gose-weasel-2.html" target="_blank">Gose</a> that came out very tart and refreshing. I aged
the <a href="http://www.1227brewing.blogspot.com/2011/11/cranberry-gose.html" target="_blank">Gose on Cranberries</a>, which ended up being a great combination of flavors.
As I mentioned in my last post I have been reading American Sour Beers and have
been re-inspired to brew more sour beers and do it with greater purpose and
consistency to build my skills and knowledge in this arena of brewing. <o:p></o:p></div>

In the past few years I have tried to brew a Flemish Sour
every two years and now I have three versions sitting in my garage. I sampled
them and gave them some quick descriptives and letter grade. I have the notes
below. I also tasted a few beers that I hadn’t touched in a year to see where
they were in their funkification. <a href="http://www.1227brewing.blogspot.com/2013/04/napoleons-dynamite-berliner-weisse-two.html" target="_blank">One is a White Labs Berliner Blend and theother was a Sour Mash Berliner.</a> My previous Berliners were using Wyeast and US
05. The other two beers were a Squash Saison brewed around the same time as the
Dark Saison, which was also infected by my “garage” strain of Brett. I also
added several dregs of commercial sours to this beer. It is close to 5 years
old and the diacetyl hung on for dear life the past 4 years. The final beer was
a 100% Brett. Anomalus from Al B at East Coast Yeast. The yeast was old at the
time brewed it and although I built up a starter the beer never really came
together well, lots of vinyl phenols. I remained patient and let it sit with my
fingers crossed and an optimistic outlook.<o:p></o:p></div>

Below is the breakdown of my short tasting notes and letter
grades assigned to each beer. I have also noted the current treatments and thoughts

Flanders Batch #1 (brewed 2007). White Labs Flemish Sour Ale
Blend. B- This beer is sour, not acetic, relatively one dimensional and has a
significant amount of vinyl phenols. I am thinking of pitching some additional
brett and fresh wort to try and convert the phenols, but maybe just more age is
needed. A good beer to use in a blend in the future.<o:p></o:p></div>

Blend. B+ This beer is super sour, has a rich balsamic vinegar quality to it. I
think this would be a good acid beer to blend with a newer less acidic

Rosy Rosalare: Flemish Sour (Brewed 2011). WYeast Rosalare.
B+ This beer has a nice tart flavor, with good structure that gives the beer a
nice mouthfeel. It has some fruity esters that remind me of cherries. It does
have some slight vinyl phenols. This has some great promise and the esters
scream, add cherries. I added 2 pounds of the tartest sweet fresh cherries I
could get at the farmers market and then I added 3 pounds of frozen dark tart
cherries I purchased from Costco. <o:p></o:p></div>

Lacto Berliner: (Brewed 2013) B+ Light Sourness, Plain
taste, very light body. Since this beer was so mellow I decided to add 2 pounds
of frozen peaches from last year. I have heard peach is the hardest of the
fruits to show through in a sour, so I figured that this would be a good base
beer to test out how peaches do in sour homebrews. There was some small visible
signs of refermentation after I added the peaches.<o:p></o:p></div>

Sour Mash Berliner. (Brewed 2013) B-/B Funky, Sour, some
fruit, but also a substantial vomit-like aroma and flavor, although the vomit
is les sin the flavor than the aroma. I have heard about this with sour mashes
so even though I’m frustrated with it, I expected it. If you can get past the
vomit aspects, the fruitiness and sourness are really nice. I had 3 pounds of
blackberries I froze last summer that I added to the beer about two weeks ago. There
was visible signs of refermentation after I added the blackberries. The vomit-like
aroma has almost dissipated at this point.<o:p></o:p></div>

Sour Squash Saison (Brewed 2008) A- Strong sour, funky,
golden color. Good body and structure. Slight/balanced acetic. Could be blended
or dry hopped with a fruity, tropical or citrusy hop with good results. Diacetyl
has almost completely faded, but I have a larger threshold than most. <o:p></o:p></div>

100% Brett a. (Brewed 2013) A This one was a surprise. I
didn’t add any souring bugs, and it has been aging in a corny keg, but the beer
came out sour, fruity, funky and a dark golden color. I came across some really
great nectarines and so I figured what the heck, lets throw these in with this
beer and see where it goes. I thought I would have to dump this batch 6 months
ago, glad I didn’t. I added almost 8 pounds of extremely fresh and tasty
nectarines to a carboy and racked the beer on top. I may dry hop as well or age
on some wine soaked oak cubes.<o:p></o:p></div>

Well I have been super busy, and just a bit lazy about
updating the blog. I see that the last real update came in April. I have brewed
5 beers in that time. Four of those beers were served at various celebrations
(work party, weddings, and rehearsal dinners). Those 4 beers were all served
within a month of each other so I had to be on a tight schedule to make sure
that the beers I was providing for the events were ready to go on those special

Blonde: basic recipe, third batch, and it amazes me how
awesome this beer comes out, I think this will become my base pale sour beer.<o:p></o:p></div>

HopBrosia IPA: A basic IPA with all the hops I had that
don’t have dank, pine and resin. I wanted a “fruit salad” flavor and aroma.
Hopped with Amarillo, Citra, Mosaic, El Dorado, Huell Melon and Galaxy. I also
used the Vermont Pale Ale yeasty from the Yeast Bay. The beer was young and it
was a bit muddled, but overall a nice drinking beer.<o:p></o:p></div>

Wedding Day Pale Ale: Basic pale ale recipe of two row,
honey malt and victory. Hooped with a CTZ bittering charge, followed by
Chinook, Amarillo and a bit of Citra at flame out. Great base malt to balance
the nice piney, grapefruit, citrusy hops. Really happy with this one and I will
be making the malt profile my base pale ale recipe. I also added grapefruit
zest at flame out.<o:p></o:p></div>

Cerveza de Jamica: This was for a rehearsal dinner that they
served Mexican food. I wanted to make a beer that was fun, refreshing and
went with the Mexican food theme. I modeled the beer after the traditional
Mexican aqua fresca Jamaica (hibiscus flower tea)The base beer was a wit
(although this could have been my basic wheat beer recipe) after fermentation
ended, I added 1 pound of dried Jamica flowers. The beer instantly turned a
bright pink, see the pictures below. I racked off the flowers after two days
and then added a hop sack with a whole hand of fresh ginger (sliced), three
cinnamon sticks, 5 cloves and 5 all spice rounds. The spices didn’t really
stick out to me even after two days in the keg. The beer was magenta in color,
tart, refreshing and a huge hit.<o:p></o:p></div>

I got my <a href="http://www.1227brewing.blogspot.com/2014/02/2014-nhc-entries-hot-curl-and-cucumber.html" target="_blank">results</a> back from the NHC, and my Hoppy Wheat: Hot
Curl entered into American Wheat beer got great feedback from the judges, but
they said it was too hoppy for the style. It would have been marked down in the
IPA category for being cloudy. Not too surprised but I was glad to hear they
are expanding several of the BJCP categories. My cucumber saison did well, but
unfortunately it didn’t make it to the next round in the veg, beer category. I
probably need it too dry out a bit more for a saison.<o:p></o:p></div>

I have been reading Mike Tonsmeire’s<span style="mso-spacerun: yes;"> </span>of the <a href="http://www.themadfermentationist.com/" target="_blank">Mad Fermentationist Blog</a> new book <i style="mso-bidi-font-style: normal;"><a href="http://www.amazon.com/American-Sour-Beers-Michael-Tonsmeire/dp/1938469119" target="_blank">American Sour Beers: Innovative Techniquesfor Mixed Fermentations</a>. </i>Reading this book has re-inspired me for sour
funky brewing that I had stepped away from as of late. Mike’s book is awesome
and super helpful. I highly suggest it if you are brewing sours or are thinking
about it. It’s a great addition to Jeff Sparrows’ <i style="mso-bidi-font-style: normal;"><a href="http://www.amazon.com/Wild-Brews-Culture-Craftsmanship-Tradition/dp/0937381861" target="_blank">Wild Brews</a></i> Because of finding my inspiration I have also been
messing with my sours that range in age from 5 years to 1+ years. I will post a

Monday I brewed a couple of low ABV session beers. They were two beers that
I had on my brewing agenda for some time, but due to brewing beers for a few
obligations I hadn’t had the chance to get around to them. <o:p></o:p></div>

The first beer I brewed was an interesting experience based on a historic style. My best friend’s mom is Polish and since she was one of the first people to let me try craft beer, and she bought my friend his first homebrew kit (which was essentially ours) I wanted to make a beer in her honor. The beer is called Grodziskie ( and more commonly Gratzer in German), which is a 100% oak smoked wheat beer. After reading about this beer online, in Radical Brewing, and Brewing with Wheat what I gather is that the beer is low in ABV, approximately 3-3.5%, highly hopped (for a historic Continental beer) and is made with 100% oak smoked wheat. I have wanted to brew this beer for a while, but considering that smoking my own wheat malt was not something I wanted to do, I thought I would be out of luck. When I was <a href="http://www.thehomebrewersd.com/" target="_blank">The Homebrewer,</a> my local homebrew shop the other day I saw that they had oak smoked wheat malt, so I knew it was time to make this beer. I am excited about the oak smoked wheat beer being available, it has a lighter smoke profile than either Rauch malt, or cherry wood smoked malt. My only worry is that since it has a very light smoke profile, the smoke may not stand out enough. I went with one hop addition of northern brewer to get some bitterness, but no flavor or aroma, I want the smoke to stand out in the flavor and aroma. I opted for a Kolsh yeast since it is probably most historically accurate. The beer should be light, refreshing and slightly smoky. Perfect for bbq weather.<o:p></o:p></div>

The second beer I brewed was a Lil’ Lager. Essentially it is
an American Session Lager about 3% ABV and hopped with Nelson and Mosaic. I
wanted to build up a healthy amount of lager yeast and I decided what better
way to do this than to make a small lager and then re-pitch the yeast into a
higher ABV beer at a later date. I pitched 3 packages of dry lager yeast. I
kept the malt bill simple and used some non-traditional hops. This will give me
a chance to see how these two hops work together. <o:p></o:p></div>

I was able to get two spots for this years National
Homebrewers Competition. The past two years I have not entered, so I am really
excited to be able to get some feedback and hopefully make it out of round 1 again.
When I was thinking which beers I wanted to enter I decided I wanted to enter a
few beers that I have brewed in the past. The first was my cucumber saison, a
really refreshing and drinkable beer that was a huge hit with my friends. The
other was my hot curl, hoppy wheat beer. However, for this version I wanted to
employ some new hops and make my second attempt at a hop burst hop
schedule.<span style="mso-spacerun: yes;"> </span>Below are further thoughts on
each beer, modifications from the original recipes and the recipes. <o:p></o:p></div>

My <a href="http://1227brewing.blogspot.com/2013/06/hot-curl.html" target="_blank">Hot Curl</a> recipe was my take on a relatively new style the
White IPA or a Hoppy Wheat beer. I have been drinking a ton of Modern Times
Fortunate Island and the other day I had Karl Strauss’ Mosaic Wheat. I often
add a bit of wheat malt to my beers as I just feel it gives a well rounded
flavor and mouthfeel. Since I enjoy Fortunate Islands so much and my first take
on Hot Curl was good, but a little one dimesnsional I decided that I would mix
up the hops a bit and use the hop bursting technique I used on my last hoppy
wheat. I have a pretty good selection of hops right now (Niko brewing has had
some great sales). Fortunate Island uses Amarillo and Citra, so I knew I wanted
to start there and I also added mosaic since it is supposed to have some
awesome fruity properties. I went with an ounce of each at 15, and 2 ounces of
Mosaic and Amarillo and 1 ounce of Citra and flameout. I am really hoping that
this beer comes out with a huge fruity hop profile. It should be great fresh
and it is a pretty easy beer to re-tweak if needed. I thought about suing some
Nelson as well, but decided against it since Nelson is so unique. <o:p></o:p></div>

Last time I made this beer I made a 10 gallon batch and
split it into two 5 gallon batches. One got cucumber and the other jasmine
green tea. They were both awesome, but I felt the Jasmine version became too
sweet over time. The cucumber version was great fresh and with a bit of age. I
may have a hard time finding local organic cucumbers this time of year (last
time I used cucs from our Suzie’s Farm CSA). I also decided last time that I
will de-seed the cucumbers since I think they gave the beer an weird bitter
quality. I may also dry hop the beer with a bit of Sorachi Ace hops. The base
beer is a simple light saison. It should be a great beer to transition into
spring/warmer weather beers. <o:p></o:p><br />

In December my dad announced that he would be retiring from his 30 year career in the Advertising Industry in March. It came as a total surprise to me. I felt since he loved what he did he wouldn't want to retire. However, after talking to him I can tell although he loves the work and the industry, he knew it was time to move on to something else. In addition he gets extra time to spend with my nephews, which I am guessing played a big role in his decision. The owner of the agency and my dad's long time business partner wanted to celebrate my dad's retirement with his "work family" and so he put together a evening to celebrate my dad. In the planning stages I was asked to make some homebrew for the celebration. I talked to my dad and I knew he really enjoyed Deschutes' Brewing Chain Breaker White IPA, so we decide that one of the beers I would make would be a White IPA/Hoppy Wheat Beer. We also talked about an approachable beer that everyone would enjoy. I have made a Belgian Pale Ale in the past and have added Meyer Lemon zest to give it a unique citrus twist, so we decide that would be the second beer. With the holidays I was crunched for time and all of a sudden we were a week away from the celebration. Realizing that I had only 7 days to brew, ferment, and package a beer for serving I started to worry. My Saturday brew day went well (I undershot my gravity on the White IPA) and I was able to knock out the two beers pretty quickly, I didn't have time to make starters so I pitched two packs of yeast, I let the beer ferment until Wednesday night and then racked the beer into the kegs and cranked up the CO2. I shook the kegs and released the glass on a regular basis. On Friday afternoon I packed up the kegs and took them to the party, my fingers crossed that the beer would be carbed enough. To my elation the beers were both carbed and they were big hits among my dad's coworkers. Both kegs blew by the end of the night. The white IPA/hoppy wheat was really tasty and sessionable and it will definitely be a recipe I try again. The Belgian Pale was a huge hit as well. I was originally going to use meyer lemon zest, but I had a gallon Ziploc of frozen juiced meyer lemon rinds from last spring. I first tried<a href="http://averybrewing.com/our-ales/samaels/" target="_blank"> Avery Samaels</a> a few years back at a Avery beer dinner hosted by Small Bar's Scott Blair and Adam Avery. The beer was paired with the dessert course and it just totally blew me away. I had tried a numb rod Barleywines but most have a strong hop bite. Samaels is a barley wine without the hops. It is sweet, but not cloyingly sweet. It is aged on both raw oak and toasted oak, so I think that the oak balances out the sweetness really well. It is an amazing beer and that night when I tried it, I went home and built a home-brew recipe. I have wanted to brew this beer since that first taste, but I just haven't gotten around to doing it…until yesterday. I decided to make a 3 gallon batch because it is supposed to finish at around 14% abv. I plan on aging this beer on a combination of raw oak chips and medium toasted oak cubes. I am also planning to bottle this beer instead of kegging it because a 14% beer is a little too big to be on tap. I also figure this beer will age really well. I named it Old Oak because it is simply an Old Ale aged on Oak.<br />

When I first heard the Bruery was making a beer called 7 Grain Saison I got excited. I figured it would be an amber hued beer with a nice malt background, and some spice from the addition of rye. When I tried it, it was hay colored, and very light, crisp and extremely refreshing. To me it seemed much more like a lager than a 7 Grain Saison. Either way this beer got me thinking. Saison's are a old style and were possibly brewed in a very rustic manner, with a malt bill of what the farmhouse brewery had on hand from the harvest, what ever hops they could get and a yeast strain with a rustic and wild profile, most likely including brettanomyces. I started to create my own multi-grain saison, but instead of going the Bruery's direction with a clean and crisp beer, I wanted something that spoke more to the rustic farmhouse style many people associate with classic saisons.<br />

I wanted to include multiple grains, but not make a hot mess of a beer. I started with 2 row, honey malt and then start adding the "other grains". I then added red wheat, rye malt, flaked rye, Simpsons golden naked oats, flake corn, and brown sugar. I thought about adding some flaked rice, but decided against it based on the flavor of the other grains and how they would probably overshadow the rice. This was also the first beer I have ever used rice hulls on, Because I had so many flaked grains, I wanted to ensure a stuck- less mash. I did not go very hop forward in this beer which is not my usual approach to saisons, a beer I think really go well with big late American hop additions. I used a more traditional hop, but it will still have a hop presence. I also wanted to use a fun, wild, rustic yeast that had some funk as well as traditional saison flavor profile. I had good luck last year with my <a href="http://1227brewing.blogspot.com/2012/02/spring-saison.html" target="_blank">Spring Saison</a> and with my <a href="http://1227brewing.blogspot.com/2013/04/citrus-saison.html" target="_blank">Citrus Saison</a> so I decided to use the American Farmhouse Strain again.<br />

The beer came out much darker than Beer Alchemy and I expected. I am not sure why it came out so much darker that expected. Maybe the rye malt gave it some extra color??<br />

For my work holiday party I made a Milk Chocolate Orange Stout. I wanted something that reminded everyone of the holidays and I had a bunch of great oranges that needed to be used. I went with a Milk Stout Base and added cocoa powder, quartered oranges in the boil, orange zest, and Gran Marnier soaked oak cubes. I had a shirt window in which to brew, age, keg and serve this beer, so when I tasted it a few days prior to serving, I thought it needed some extra chocolate and orange flavor, so I added an additional can of cocoa powder to the keg as well as some orange zest on the sack that also held the Gran Marnier soaked oak cubes. The oak and zest were great, the cocoa powder became a muddy mess, although it tasted great.<br />
<br />
The beer was a hit and I felt I got pretty close to nailing the chocolate orange. However, next time I will bump up the chocolate malts to have the base beer really create the chocolate flavor, so I don't create a muddy mess.<br />

Well I am finally back. I haven't brewed since early June. I had a slight change at work and I have a lot more responsibility. Last spring I was named principal of our new middle school. Part of these responsibilities included a pretty substantial remodel of old preschool classroom spaces into the middle school. Managing the remodel and planning the new school took up almost all of my summer. Then once school started I have been super busy. I think it is finally starting to slow down a bit. I had Veterans Day off so I decided it was time to brew. This summer I did get one chance to brew a 10 gallon batch of a basic saison, that I then split into two 5 gallon batches. In one batch I added 3lbs. of fresh cucumber into secondary and the other half got about 8 tea bags of a jasmine green tea. These both came out great and were wonderful refreshing summer beers.<br />
<br />
Today I brewed up a batch of a brown ale. I wanted a malt forward beer with enough hop bitterness to balance it out. It is kind of a cross between a Southern Brown Ale (malty, sweet, fruity) and an American Brown (roasty, hoppy, dry). The malt bill is more Southern, but I used a substantial dose of Sterling hops in the boil. My local homebrew store,<a href="http://www.thehomebrewersd.com/" target="_blank"> The Homebrewer</a> has an amazing variety of grain. I built my recipe using Beer Alchemy, but upon getting to the store I realized the store had some better options for my beer, so I called an audible on the malt bill. I built the base on a 50/50 blend of Golden Promise and Ashburne Mild. I then picked out two crystal malts to add some sweetness and added dark fruit, burnt sugar and toffee flavors. I then finished off the bill with pale chocolate malt to get chocolate flavors and color, and some coffee kiln malt to add some roasty, coffee-like flavors. I also used a American Style yeast to keep the beer dry and allowing the fruit component to come mainly from the malt bill and not the yeast.<br />
<br />
This beer will a great beer to pair with Thanksgiving dinner. <br />

I was reading an article a few months ago about the history
of San Diego (a subject that I geek out on). While reading about San Diego’s
surf history I stumbled upon an article about a surfer-made statue that
represented as the artist put it a “crummy surfer”, loosely model after
himself. The statue was known as Hot Curl was first erected in 1963 by artist
and self-described “crummy surfer” Mike
Domer (now 77) and his buddy Lee Teacher. The two built the 6’4” cement, scrap
iron, and chicken wire statue and placed it next to the surf shack at Windansea
beach in La Jolla. The statue was subject to love and hate and was taken down
by City crews, only to be built again after passing city permit tests. Finally,
a disgruntled surfer bludgeoned it to pieces late one night. Although the
statute didn’t last long in its original location, a replica now sits in the
Surf Museum. In addition to the current replica, Hot Curl became an icon of the
surf movement in the 60s and continues to represent that early age of surfing
culture today. Hot Curl has also been a comic for a number of years.<o:p></o:p></div>

I love these old nostalgic stories of San Diegans in the
“old days” doing crazy, weird and awesome things. The city was so much smaller
then and was much more laid back. I figured I would honor the surf culture of
San Diego through a beer. Karl Strauss makes a traditional hefewiezen called
Windansea Wheat. I wanted to build off their model and create a beer that is
just a little more San Diegan than a German Hefe. So I built a recipe for a
Hoppy Wheat Beer (an IPW if you will). It is pretty standard wheat malt bill
with an American Wheat yeast and American Hops. This beer should be a great
porch sipper or a clandestine beach brew. Either way it should make a great
summer beer. I hadn’t brewed a hoppy
beer in a while and when I opened my bag of Amarillo hops I was inundated by the
amazing aroma of this hop, which continues to be my favorite hop. Here’s to Hot

I have had really good luck fermenting beer with 100% Brett. The beers have finished dry, extremely fruity and slightly tart. My first two batches used Brett c. and Amarillo and Nelson hops respectively. The Brett c. and Amarillo worked amazingly well together and is probably the best beer I have ever brewed. I have a post <a href="http://1227brewing.blogspot.com/2011/03/brett-2.html" target="_blank">here </a>about my second batch and my thinking with these beers. I have changed my thinking a bit, and this time I decided to create a big starter before pitching. I may get a slightly cleaner finished beer but that is fine.<br />

For this batch I used brettanomyces anomalus that I received from Al B before he opened up East Coast Yeast. He told me that this strain was a WYeast strain of Brett a. The vial was old (2009-10) so I started with a small amount and ramped it up over a number of starters. The yeast was very active by the second round of starters and started fermenting vigorously once I pitched it into the wort. I kept with the same 100% brett strain and 100% hop varietal. In this version I used Rakua hops, which should have peach, passionfruit and mango-like characteristics. I felt that these hops would complement the fruitiness of the Brett a. well.<br />

I had a bunch of citrus (blood oranges, navel oranges, and Meyer lemons) and wanted to brew a beer for my work happy hour my wife and I will be hosting in early May. I knew that saison is a style that will be nice and drinkable and refreshing for an afternoon happy hour party. I also thought that the citrus would play well with saison characteristics. My coworker Alex came over to help me brew up this beer. His good friend and housemate just started brewing and he wanted to see what all grain was about. Alex chopped the citrus up into 1/8's and we placed them in a mesh bag and added the last 10 minutes of the boil. I used White Labs American Farmhouse blend yeast which has some funk in it. To compliment the citrus and the yeast Alex and I decided to use Motueka hops which are said to give citrus, passionfruit and tropical fruit aromas and flavors. We also added a small amount of Amarillo for that orange component. In addition I threw in a small amount of cracked black peppercorns, and 6 crushed fresh bay leaves at flameout. The bay leaves had this great fruity aroma with a slight menthol-like component. The beer is fermenting away and smells amazing!<br />

Recipe: 2-Row, White Wheat, Vienna. Motueka and Amarillo hops at 60, 20, and Motueka alone at flameout. Blood oranges, navel oranges, and Meyer lemons, black peppercorns, and fresh bay leaves. Berliner Weisse is one of my favorite styles of beers. I had my first a number of years back at Stone Brewing's 2nd annual sour fest. It was a sweltering, humid day in July. Although many of the beers were tart and refreshing the Berliner was just outstanding at quenching my thirst and not getting me too wasted. That was before Berliner Weisse "blew up". The next version I had was the Bruery's Hottenroth. That beer woke me up to a whole new version of Berliner Weisse. In addition my homebrew buddy Pat made an amazing batch that he served at our house warming party almost 5 years ago. Since then I try and make at least one batch a year, usually in time for summer. In the past I have built up a starter of a commercial strain of lactobacillus and pitched that for about 48 hours before pitching a clean ale yeast. This has worked very well for me in the past. However, it does take some time to get sour enough. On a side note I usually brew a batch of Gose with the bacteria/yeast cake left over from the berliner.<br />

This year I had some extra time on my hands and decided to test two methods of making Berliner Weisse. I have heard good and bad things regarding sour mashes for Berliners and so I figured I would do a side-by-side experiment. I would sour mash one Berliner (which should allow for a nice sour beer, in a much faster time frame. may have some off flavors, not as complex) and I would do a more traditional version where I pitch a commercial lacto strain and then after ~48 hours at warm temps I cool it down and pitch a clean ale yeast (which should be more complex, less chance for off flavors, be nice and sour, but takes longer). We will see how the results turn out.<br />

Here is an overview of my procedure:<br />
-16# of grain into the mash tun, 8# 2-Row and 8# of Wheat Malt, mashed at 150F for 35 minutes.<br />
- Drain off first runnings and collect.<br />
-Sparge mash and collect second runnings (this was 8 gallons final).<br />
-I split that 8 gallons into two parts. 4 gallons went back into the mash and 4 gallons stayed in the kettle. I then added 1.5 gallons of water to the kettle. I added a pitcher full of ice to the mash to cool it down closer to 100F (I only got it down to 125F, I tok the temp tonight and it was down to 110F, in addition the grain had risen above the liquid level and the funky aromas were starting to form.) I wish I had pictures.<br />
-The sour mash will hold at ~100F for 48 hours. I added about a half pound of crushed grain to the mash tun as well to introduce some healthy lacto.<br />
-Kettle Half was hopped and boiled for 15 minutes, cooled to 80F, and the lacto was pitched. after 48 hours I will cool and add clean ale yeast.<br />
- The sour mash will get mash hops, drain and sparked to bring final volume to 6 gallons. I will boil it for 15 minutes to kill the lacto. I will then add a clean ale yeast to finish fermentation.<br />
<br />
My hope is that the sour mash version will be just as sour, and complex as the commercial strain version, and hopefully with no off flavors. If this is the case then I would do a sour mash from here on out, since this version would get me to the same ends at a much faster rate.<br />

This was one of the first beers I ever brewed and it was my first beer to medal in a competition. Its a great beer for the gloomy foggy Spring/Early Summer here in San Diego (May Grey and June Gloom). Westerlies blow in from the ocean and create these gloomy conditions, I love so much. A hefeweizen is a cloudy, mirky beer perfect for this time of year.<br />
<br />
I typically like Hefeweizens that lean more closely to the banana versus the clove flavors/aromas. I am watching the fermentation temps closely to produce large amounts of the ester isoamyl acetate. I am aiming to stay in the high 60s to low 70s, 68-71F.<br />

I made this batch for a good friend who will be deployed shortly to Afghanistan, it is her favorite beer I have made. I tried a year or so again to do this batch all grain with no decoction and it wasn't very good at all. I kept to simple and used DME, light and Wheat. I hope it turns out and she can enjoy some before she is deployed.<br />

This is my <a href="http://www.1227brewing.blogspot.com/2012/01/chargers-session-ipa.html" target="_blank">second version</a> of a session IPA or an iPA, named after my french bulldog Charger. He is older now, but this high flavor, high hopped, low alcohol IPA fits him perfectly. I really want a beer that I can a number of at night after work and not feel the effects of. I essentially just lowered my basic IPA recipe malt bill, and added as many hops as I would in a stronger Pale Ale or a smaller IPA. The last version was bitterer with Warrior and then Hopped with Nelson at 10 minute intervals the last 20 minutes of the boil. I also dry hopped the original with Nelson. The beer got some good feedback at a homebrew club meeting, but some said to call it an IPA it needed to be more bitter. I don't normally like IPAs that are too bitter, I enjoy the late hops that give aroma and flavor, but I guess that their opinions have some merit. For this version I kept the alt bill the same, but for the hops I wanted a slightly different hop profile. I really wanted a more tropical and citrus profile. I bitterer with Falconer's Flight to get a tropical and citrus background, with enough bitterness to call it an iPA. I then used a blend of Motueka, Rakau, and Amarillo at 20 and 10. The Motueka gives citrus notes of lemon and lime with a tropical fruit aspect as well. The Rakua gives more tropical fruit (this hop smelled fabulous when I opened the bag) especially passionfruit, and possible peach. I may use the Rakua as a single hop for my net 100% Brett beer. I used the Amarillo in these two add-ons to add some orange/citrus to round out the fruity profile. The last addition was just 50/50 Motueka and Rakua. I also plan on dry hopping this beer with these hops.<br />

Today I brewed a Biere de Garde. This is a style that I have wanted to brew for some time now, but I just haven't gotten the chance to do it. Biere de Garde is in the same family of beers as Belgian Saison. Biere de Garde is a farmhouse ale from Northern France. Both of these beers were originally brewed on small farms to supply the local population with beer to drink after working long days on the farm, or so the story goes. Biere de Garde is a tough style to find commercial examples of. Luckily, the Lost Abbey here in San Diego makes a very nice example of the style in its <a href="http://www.lostabbey.com/lost-abbey-beers/year-round-beers/avant-garde/" target="_blank">Avant Garde</a>. Avant Garde is brewed with Lost Abbey' s house lager yeast, fermented at hybrid ale/lager temps. Since commercial examples are so tough to find, another important resource is Markowski's <a href="http://www.brewerspublications.com/books/farmhouse-ales-culture-and-craftsmanship-in-the-belgian-tradition/" target="_blank">Farmhouse Ales</a>. This book does a great job explaining Biere de Garde, which can be a very difficult beer to describe, since very few commercial examples exist and very little is known about the original versions of the styles. In general the more modern versions are clean and malty, with a moderate hop profile. Markowski argues that much like early Saison's, Biere de Garde was a farmhouse product, and probably was brewed with what ever grain, hops and yeast were available to the brewer. In addition they probably had some contamination of wild yeast or bacteria. I couldn't decide which route to go with, modern or traditional. Since the few commercial versions I have tried were the modern version (excluding Jolly Pumpkin's Biere de Mars). I wanted to ferment the beer with <a href="http://www.whitelabs.com/beer/strains_wlp072.html" target="_blank">White Labs French Ale Yeast</a> but since it wasn't available at the LHBS, I went with another neutral ale yeast, White Labs European Ale. This yeast ferments clean, and will enhance the malt profile of the style. I am thinking about pulling off a gallon or so of this beer and adding some wild yeast to get a more traditional version of the style. This beer had amazing amber color and I look forward to see how it turns out. The last characteristic of Biere de Garde's is that they are Guarded or aged for long periods of time to mature and smooth out the rougher edges. I will be aging this one for at least 2-3 months after primary fermentation is complete.<br />

When I was first getting into brewing about 6 years ago (and still extract brewing), I decided to break away from the homebrew stores basic recipes and try my hand at my own recipe creation. I pulled up the BJCP style guidelines and started reading through the history, ingredients and other characteristics of al the styles. At that same time <a href="http://hamiltonstavern.com/" target="_blank">Hamiltons Tavern</a> had just opened and quickly became a weekly stop for me and my buddies to do some "research" on various styles. I drank two beers that really change amy thinking on beer, and inspired me to build my own recipe. The first was Alesmith's Wee Heavy and the other was Traquair Jacobite ale. Both are wonderful strong scotch ales. I knew after tasting these beers I had to create my own version of a Scotch Ale. I put together a recipe that was pretty standard, but I added some peat smoked malt (I know its not traditional, but I want that smoky rustic flavor) and dark brown sugar, to impart some molasses-like favors.<br />

The beer was awesome, not to style because of the peat smoked malt, but it was a big favorite of my friends. One called it a man's campfire beer. I even entered it into the San Diego County Fair and even though it didn't place, it got great feedback from the judges, one said that he would buy it at a bar. In my opinion that is the best feedback I can receive from a judge.<br />

I have been wanting to brew my Wee Obese for many years, but it just hasn't made the cut when I decide what I want to brew. I don't often brew the same beer twice. Last week I finally got down to brewing his beer again. However, I dialed back the peat smoked malt to just a few ounces. Everything else was pretty much the same as the original. I hope tho sheer comes out as great as the first beer did. I was inspired a few months back to make a dry golden ale with the spiciness of rye malt. I put together a recipe and then forgot about until last week. I started scrolling through my Beer Alchemy recipe library trying to figure out what I wanted to brew. The last few beers I have made have been darker and more malt driven. I wanted to get something a little more light and hop driven on tap. I knew that this was the beer I needed to make. I wanted the rye to shine, so I left the recipe pretty simple with three malts including the rye (rye made up ~28% of the malt bill). I originally wanted to just use Northern Brewer hops all the way through, but at the last minute I subbed in some Amarillo at flameout. I debated what yeast to use; American Hefe, Wheat or US-05. I ended up going with the cleanest so that I could let the rye shine and it would allow me to see what rye really lends to a lighter beer. If I like how it works, I may incorporate it into an IPA. I am hoping to get in a batch tomorrow on my last day of vacation, either a Wee Heavy or a Dark Mild.<br />

Good New Year to all! I actually brewed these beers back a month or so ago, but didn't get a chance to post about it. The<a href="http://1227brewing.blogspot.com/2011/11/feliz-navidad.html" target="_blank"> Feliz Navidad</a> is a beer that I brewed last year for Christmas. It is a pretty standard stout base with added cocoa powder added at flameout that then gets dry spiced with vanilla bean, cinnamon, chile peppers. The beer was huge hit last year at my Christmas party. My friend who works at a local brewery tried to pitch this idea to them for their holiday beer, but they wanted something that could age a little bit longer (they are doing a 12 years of Christmas beer), maybe in the later iterations? I decided to bump up the cocoa powder by an ounce this year, but other than that I didn't really change anything.<br />

The other beer I brewed for the work holiday party was a twist off a brown mild that I brewed earlier in the month. I wanted a spiced winter ale, but often find the spices use din these winter warmers to be a little harsh. Instead I tea bagged my beer with 6 Mate Chai tea bags. I left them in the keg for a week and this beer was a huge success. I personally would want a more sweet and malty base beer than what I had. Overall, I was very happy with this beer and think it is a great beer for fall and early winter.<br />

I have this week off, so I will b e doing some brewhouse cleaning (very much needed!) and brewing a couple of beers. Great to be back. I took an unplanned hiatus from beer brewing. Life, work, and the heat got in the way and I didn't brew for 3 1/2 months, this is the longest I have gone without brewing in the past 6 years. I had been dying to brew, yearning to try out some new recipes. I even bought grain, but never had a chance to get to it. I had Veteran's day off, so I knew I had to get some beer made since I had time and with the holidays coming up I needed some new beers to serve to family and friends. Thanks Jeff for worrying about me. We will have to brew soon and finally set up our sour tasting soon.<br />

Living in San Diego, I am often tricked by the "seasons", we get cold winter like rain storms, followed by hot and dry Santa Ana conditions in the Fall. The evenings cool down, but the days are still warm. Hell, it was 74F today. So it is difficult for me to decide what to brew in the Fall, maybe a saison for the warm days, maybe a big malty amber, or maybe a West Coast IPA. I have been wanting to brew an imperial amber for a long time and with the weather finally starting to turn I decided to go for it. I doubled my <a href="http://1227brewing.blogspot.com/2011/10/red-tide-american-red-ale.html" target="_blank">red ale</a> recipe from last Fall. I also decide dot move away from the American hops and go for a more traditional hop. I wanted to use Northern Brewer my go to hop for beers where I don't want the hops to stand out. However, I couldn't get any so I went with Sterling hops. I want this beer to be malty, toffee-like with a slight roast. I upped the chocolate malt a tad and I think that the beer may come out a little darker and more brown than I was shooting for. I guess when you haven't brewed in 3 1/2 months, this isn't that big of a deal. Since the beer was going to be on the larger side ~9% I thought, hey why not get a second beer out of the mash. I was hopping to get a dark mild out of this beer, and to my surprise I was able to get a nice 1.040 OG beer from a second mash. I really like this idea and will try and do this with any of my larger beers.<br />

All in all, the brew day went very well, and I am happy to be back in the saddle. I have all of next week off, so I will be brewing up a couple of beers for my work Holiday party. I will also be brewing my <a href="http://1227brewing.blogspot.com/2011/11/feliz-navidad.html" target="_blank">Feliz Navidad</a> (Mexican Hot Chocolate Beer) it was such a great beer that I have to make it again.<br />

I recently saw a video cast of Drew Beechum speaking at this year's NHC about simplifying the brewing process <a href="http://www.northernbrewer.com/connect/2012/07/drew-beechums-brewing-on-the-ones/" target="_blank">"Brewing on the Ones"</a> . In the video he speaks about SMaSH beers, which are Single Malt and Single Hop Beers, this got me thinking. I had bunch of 2-Row on hand and I just got some new varieties of hops that I wanted to try out (Motueka, Riwaka and HBC324 Experimental). I also recently stocked up on some new yeast strains and some that I wanted to use again. I wanted to make a saison using White Labs new Saison III strain, a strain I first tried at Drew Beechum's <a href="http://www.ahaconference.org/seminars/a-saison-for-every-season/attachment/saison-part-deux-web-2/" target="_blank">Saison for Every Season </a>lecture at last years NHC. I was one of the people who emailed White Labs about releasing this strain, at last years NHC is was still an experimental and unreleased strain. I wanted to keep the beer simple so I could see how the Motueka hops and the Saison III strain would act. This strain is spicy and fruity like a traditional saison strain, but it also has this wonderful tartness that makes it even more refreshing. I also wanted to keep the beer lower in alcohol. The recipe wasn't a true SMaSH beer because I did us some flaked oats to add a slight amount of body and mouthfeel since I was only using 2-Row. I also boiled the first runnings for about 10 minutes to try and get some extra color and taste since 2-Row and Oats were the only malts.<br />
