The Flemish sour that recently won a medal...I have. The Flemish sour that recently won a medal at the county fair, was a blend of an very sour flemish red and a malty old ale. I believe we did a 75% sour to 25% old ale and a 25% sour to 75% old ale. The beer with the lower ration of sour beer ended up being the bette beer. No wind you, that beer was brewed in 2006, and blended around 2009, and entered in competition in 2014. I hope to do more blending in the future with many of my batches of sour beers. The Lil Lager is once and hoppy, with a solid bitterness and wonderful hop flavor (not sure if any of the Mosiac/Nelson flavors come through) but very tasty none the less. I will probably dry hop this guy as well. The Gratzer is really good, bitter, light smoke, slight wheat tartness, refreshing! The only down side so far is that it kind smells nasty (sulfur-like) , but I think once I cool and carb it up the smoke aromatics will take over. I figured I had a Brett strain or some other wild yeast doing work in the beer, but if the WL version can ferment on its own then my observations make sense. That might be another cool Berliner experiment different lacto strains in the same wort. <br /><br />The commercial pitch version smells nice, the sour mash version still smells like rotten cheese.
